Puffed Quinoa Meatloaf

Serves 4


1/2 lb ground meat (I used lean ground pork)
1/2 a sweet yellow pepper or red pepper chopped
2 cups puffed quinoa plus some for rolling
1/2 cup breadcrumbs plus some for rolling
1 egg
Fine sea salt & freshly ground pepper to taste
1 tbsp Worcestershire sauce
2 tbs Canola oil plus some for drizzling


Heat oven to 400o.
Drizzle the canola oil into a baking dish, such as a Pyrex. Lay a paper towel out and sprinkle generously with breadcrumbs.
Place all the ingredients in a large bowl and mix together with your hands until well combined. Still using your hands, shape the mixture into a long log then gently roll in the breadcrumbs. Place in the centre of the baking dish and drizzle a little oil over it, then sprinkle generously with puffed quinoa.
Cover with foil and bake for about 45 minutes. Remove foil and continue baking until browned and cooked through.
